1. Soak fruit in brandy in a large bowl for at least 2 hours or preferably overnight.
2. Cream the butter and sugar until light and fluffy - best using an electric mixer. Add in the eggs.
3. Sift together all the dry ingredients and spices and fold into butter micture.
4. Stir in the soaked fruit, cream, almonds, jam and lemon zest, and mix thouroughly.
4. Spoon the mixture into plastic mini pudding bowls filling approximately 3/4 , and cover with a lid or some tightly positioned tin foil.
5. Put into a pot of boiling water and simmer for 2 hours (if your pot is big enough put 2 layers of pudding bowls and swap them over half way through)
Tips
(you can try and use a microwave but the traditional recipe steams the puddings)
