Method

  • 1. Preheat oven to 200 degree C. Grease muffin tins.

  • 2. 1st bowl: mix all the dry ingredients - sugar, flour, soda, salt and spices.

  • 3. 2nd bowl: beat the egg, and add in the molasses, butter and milk.

  • 4. Combine the 2 bowls together until there are no lumps. It is easiest to use an electric mixer on low .

  • 5. Spoon into the muffin cases allowing room to rise - fill them about three-quarters full

  • 6. Bake for 15 minutes and to check they are done pierce with a knife ensuring the knife is clean when you take it out of the muffin

    • 2 tsp baking soda
    • 200g brown sugar
    • 1 tsp cinnamon powder
    • 1 tsp ginger powder
    • 1 pinch salt
    • 0.25 tsp nutmeg
    • 1 egg
    • 100g molasses
    • 240ml buttermilk
    • 120ml melted butter
