Gingerbread Mini Muffins

Ingredients
- 2.5 cups flour
- 2 tsp baking soda
- 1 cup brown sugar
- 1 tsp cinnamon powder
- 1 tsp ginger powder
- 1 pinch salt
- 0.25 tsp nutmeg
- 1 egg
- 0.5 cup molasses
- 1 cup buttermilk
- 0.5 cup melted butter
Method
- 1. Preheat oven to 220 degree C. Grease muffin tins.
2. 1st bowl: mix sugar, flour, soda, salt and spices.
3. 2nd bowl: mix the egg, molasses, milk, and butter.
4. Add the wet ingredients to the dry and stir until just blended.
5. Add to muffin tins - 3/4 full
6. Bake for 15 minutes.
Tips
- If you dont have buttermilk, just add 1 tbsp of white vinegar to a cup of regular milk and let sit out for about 10 minutes.
