Gingerbread Mini Muffins

    Ingredients

    • 2.5 cups flour
    • 2 tsp baking soda
    • 1 cup brown sugar
    • 1 tsp cinnamon powder
    • 1 tsp ginger powder
    • 1 pinch salt
    • 0.25 tsp nutmeg
    • 1 egg
    • 0.5 cup molasses
    • 1 cup buttermilk
    • 0.5 cup melted butter

    Method

    • 1. Preheat oven to 220 degree C. Grease muffin tins.

      2. 1st bowl: mix sugar, flour, soda, salt and spices.

      3. 2nd bowl: mix the egg, molasses, milk, and butter.

      4. Add the wet ingredients to the dry and stir until just blended.

      5. Add to muffin tins - 3/4 full

      6. Bake for 15 minutes.

     

    Tips

    • If you dont have buttermilk, just add 1 tbsp of white vinegar to a cup of regular milk and let sit out for about 10 minutes.
