Stuffed Chicken Breasts with Mozzarella and Parma Ham

    Ingredients

    • 4 chicken breasts
    • 1 ball mozzarella . sliced
    • 8 cherry tomatoes
    • 8 basil leaves
    • 8 slices Parma ham

    Method

    • 1. Preheat the oven to 200 degree C.

      2. Make a slit down 1 side of each chicken breast to form a pocket. Season.

      3. Stuff each pocket with slices of mozzarella, 4 cherry tomato halves and a quarter of the basil.

      4. Wrap each chicken breast with 2 pieces of ham and season. Put on a baking sheet and cook for 20-25 minutes.

    • Really really easy to make & everyone really enjoyed them, they looked really good & tasted excellent. Only thing I'd say is I did thin slices of the Mozarella & it practically disapeared so next time I'll just cut it into 4 pieces & leave it like that.

    • Tastes great and so easy but found the mix of parma ham and mozzarella a bit salty so would probably use a different cheese next time, may have to try the roule
