Method

  • 1./ Fry the leeks in a little butter and prepare the mashed potato. Cook the potatoes adding milk or cream according to preference. Season with salt, pepper and a pinch of nutmeg. Stir the softenend leeks into the mash.

  • 2./ Fry the onions in a little oil until softened and add the lamb mince and carrots. Begin to break this up and brown. Add the worcestershire sauce, herbs, tomato puree and cinnamon and cook for a few minutes. Add the flour and cook for a further 5 minutes on a low heat. Finally add the water and peas and cook for 10-12 mins until you have a thick sauce. Season to taste.

  • 3./ Lightly grease a casserole dish and add the meat mixture, then cover with the potato and leek mash. Score with a fork and sprinkle with cheddar to cover the mash and cook in the oven for 30 minutes at gas mark 5 (220 degrees), or until the cheese has browned.

  • 4./ Enjoy! A little brown sauce won't go amiss!

    • LAMB MINCE 500G
    • 1 Large onion. chopped
    • 2 tblsps Tomato puree
    • 4 tsps Worcestershire sauce
    • 1 tsp Dried marjoram
    • 1 tsp Dried rosemary
    • ½ tsp Ground cinnamon
    • 1 tblsp Plain flour
    • a pinch Nutmeg
    • 2 medium Leeks. sliced
    •  Cheddar Cheese . grated
    •  Salt and pepper
    •  A quantity of mashed potato. made using 4-5 large spuds
    • a splash Milk
    • 75 ml Water
