1. Put the butter, flour and icing sugar in a food proceesor and mix. (It should look like breadcrumbs)
2. Add egg yolk and then slowly add some cold water - teaspoon at a time so that the breadcrumbs turn into the right consistency - a dough ball.
3. The best result for rolling out is if you leave it in a freezer bag for an hour in the fridge before you roll it out.
4. I use a fairy cake tin and get a glass that is a little bigger than the baking tray holes - once the dough has been rolled out (to about 2mm thick) cut out the base by using the glass and lay it in the baking tray. (Make sure you have left at least a third of the dough for the top)
5. Add a tablespoon of mincemeat onto each pie base and then I add a drop of brandy!
6. We then roll out the pastry and cut all kinds of shapes to cover the top.

Pastry turned out great and my daughter really enjoyed rolling the dough and cutting out the shapes. Tastes good, too.
