Method

  • It's sooo easy. Just add everything together and mix with your hands or in a processor. I prefere to use my hands, it comes out more rustic!

  • Press into a loaf tin. (no need to grease)

  • Lay the bacon on the top

  • Cook in the centre of a preheated oven at about 150-160 degrees for 1 1/2 - 2 hours.

  • Leave to stand for 10-15 mins before turning out and carving.
  • Tips

    • To be honest, most of the ingredients are optional. You can use any minced meat with the egg and bread crumbs and add whatever seasonings you like. Its nice with sweet chilli sauce, you can put garlic in, mushrooms, you can put sausage meat in and even use some of the sauces to glaze the top. Its so versatile and very tasty! I love meat loaf.

During cooking i tend to drain off some of the fat half way through.

I often cook this for buffets too, goes down a treat!
