Vegetables Fettuccine Pasta Alfredo

Method

  • PASTA:

  • 1. Bring a large pot of water to boil, cook the pasta according to the package directions.

  • 2. Heat a saute pan or wok, when hot add the olive oil, the garlic and then the broccoli, asparagus and mushrooms. Add the cherry tomatoes cut in half and set aside.

  • SAUCE:

  • 3. Mash the tofu in a bowl, combine the rest of the sauce ingredients except the broth. Blend, adding just enough broth to make it smooth and creamy. Transfer to a sauce pan and heat over low heat, do not boil.

  • Ingredients

    •  Fettuccine pasta
    •  1 tbsp olive oil
    •  4 garlic cloves
    •  1 cup br°Ccoli
    •  1 cup aspargus
    •  2/3 cup crimini mushrooms
    •  2/3 cup cherry tomatoes
    • SAUCE
    •  ½ cup tofu
    •  2 tbsp butter
    •  ½ cup sour cream
    •  3 tbsp yeast
    •  2 tsp oregano
    •  1 tsp rosemary
    •  ½ onion chopped
    •  ½ cup strong vegetable broth
    •  salt and pepper
