Method

  • 1. Pre-heat the oven to 180°C.

  • 2. Weigh the eggs (in their shells).

  • 3. Whatever the weight of the 2 eggs is, add the same weight of butter and sugar to a mixing bowl and cream together until light and fluffy (e.g. if the eggs weigh 100g, add 100g of butter plus 100g of sugar).

  • 4. Add the eggs and vanilla essence and mix thoroughly.

  • 5. Then fold in (the same weight as the eggs of)the flour.

  • 6. Spoon the mixture into cupcake cases and bake for 10-15 minutes.

    This is the quickest and easiest recipe and always works. My kids loving making these with me.
