3. Whatever the weight of the 2 eggs is, add the same weight of butter and sugar to a mixing bowl and cream together until light and fluffy (e.g. if the eggs weigh 100g, add 100g of butter plus 100g of sugar).
4. Add the eggs and vanilla essence and mix thoroughly.
5. Then fold in (the same weight as the eggs of)the flour.
6. Spoon the mixture into cupcake cases and bake for 10-15 minutes.
