Method

  • Peel and slice the onion put in a small saucepan with the dripping or margarine, fry for 5 mins. Add the kidney, cut into small pieces, a good seasoning of salt and pepper and enough water to cover. Simer very gently until the kidney is tender. Mix the ketchup with the flour and add this to the kidney, stir well until it thickens.

  • Peel and cut the potatoes into even sized pieces, boil in salted water until cooked. mash the potatoes with milk and butter until fluffy.

  • Place a layer of potatoes into a pie dish, then the kidney mixture topped off by another layer of potatoes.

  • Cook in a hot oven until the top is browned.
  • Tips

    • Althought the Welsh title for this dish translates to "Dish Cloth Pudding" the sub title is Potato & Kidney Pudding, which sounds marginally more appetising! I'm not sure why it's referred to as a pudding, but I've copied it faithfully from the original, so it's not for me to re-name it.

    Maybe not of today's taste, but it seemed to be popular in the 1900's and they must have thrived on it, or I (and you!) wouldn't be here!
