Method

  • 1. Chop the courgettes and the white of the leeks into 1cm rounds.

  • 2. Fry them in the olive oil until they are lightly brown.

  • 3. Sprinkle with herbs and tip into a baking dish. Add the contents of the tin of tomatoes and stir, then cover with the grated cheese.

  • 4. Bake at 180 C for about 1/2 hour until the cheese is nicely bubbled.
  • Tips

    • This can be prepared in advance and popped in the oven when catering for loads of people.

    • 8 courgette
    • 2 leeks
    • 2 tbsp. olive oil
    • 1 tsp. herbs
    • 1 can chopped tomatoes
    • 1 cup grated cheese
