No Fail Chocolate Cake

Method

  • Sift flour,sugar and 2 teaspoons baking powder,salt and cocoa.
  • Seperate Eggs
  • Beat yolks with the vanilla and remaining 2 teaspoons of baking powder.
  • Beat Egg Whites until Fluffy
  • To the dry ingredients: add the oil and boiling water, mix well
  • Stir in the egg yolk mixture
  • Fold in the beaten egg whites
  • Divide mixture into 2 x 6 inch round cake tins and bake in preheated oven at 150C for 30 minutes

  • ICING
  • Cream together 2 Tablespoons Cocoa, 4 Tabblespoons Margerine/Butter and 8 Tablespoons Icing Sugar.

  • Fill and top with icing. For extra flavour Spread the inside of each layer of cake with Rasberry jam then the icing.
  • Tips

    • Don't be too fussed about egg whites not fluffing - it will still be ok as long as they are beaten well.

    • ½ Cup Cooking Oil (Sunflower is best)
    • ½ Cup Boiling Water
    • 4 Eggs (Seperated)
    • Pinch Salt
    • 2 Tablespoons Cocoa
    • 4 teaspoons Baking Powder
    • 1 teaspoon Vanilla Essence
