Method

  • Beat the egg whites in a clean grease-free bowl until stiff.

  • *Grate the lemon rind, place in the blender with the egg yolk, sugar, butter, flour, milk and 3 tablespns of lemon juice.
  • Blend until smooth.*

  • Fold into the egg whites.

  • Pour into a buttered 2pt pie dish. Place in a water bath and bake for 40 - 50 mins at 150C

  • Serve with pouring cream or creme fraiche

  • Tips

    • If not using a blender,proceed until * then place all the blender ingredients in a roomy bowl and beat together with a hand mixer until light and fluffy. Fold in the egg whites and proceed as above.
