Beat the egg whites in a clean grease-free bowl until stiff.
*Grate the lemon rind, place in the blender with the egg yolk, sugar, butter, flour, milk and 3 tablespns of lemon juice.
Blend until smooth.*
Fold into the egg whites.
Pour into a buttered 2pt pie dish. Place in a water bath and bake for 40 - 50 mins at 150C
Serve with pouring cream or creme fraiche
Tips
If not using a blender,proceed until * then place all the blender ingredients in a roomy bowl and beat together with a hand mixer until light and fluffy. Fold in the egg whites and proceed as above.
A piquant pud which separates out on cooking to a light sponge with a lemon sauce beneath. It can be made in a blender or in a bowl with a hand mixer.
