Method

  • 1. Melt the margarine,sugar, syrup and spices. Heat till it get a little bubbly, then remove from heat.

  • 2. Leave to cool. Once cold, add the eggs. Mix the bicarbonate with a little bit of flour, mix in and then add the rest of the flour, a bit at a time.

  • 3. Once all the ingredients are mixed together, wrap in either foil or clingfilm and leave in fridge over-night.

  • 4. Roll out thinly (about 0.25 cm)on a floured surface then cut into shapes to cook. Oven temperature 175-200 degrees for 8-10 mins.
  • Tips

    • Cut the dough into sections when rolling the dough to make it easier.

    Ingredients

    • 300g margarine or butter
    • 3 eggs
    • 0.4 litres sugar
    • 1.3 litre flour
    • 9 tbsp syrup
    • 2 tsp bicarbonate of soda
    • 1 tbsp ground ginger
    • 2 tbsp ground cinnamon
    • 1 tbsp ground cloves
    • 2 tsp ground cardamon
