Hot Cross Buns with Marzipan Twist!!

Method

  • 1. To make the buns. sieve the flour and salt into a mixing bowl and rub in the butter until mixture resembles fine breadcrumbs. Stir in the yeast, sugar, fruit, peel and spice.

  • 2. Warm the milk to body temerature, pour into the flour mixture along with the egg (beaten) and mix to a soft dough.

  • 3. Turn the dough onto a floured surface and knead until elastic and no longer sticky. Place back into a mixing bowl and cover the bowl with lightly oiled clingfilm and leave in a warm place for about 45 minutes or until the dough has doubled in size. Grease a baking sheet and shape the dough into 8 separate rolls - place rolls on to the baking sheet leaving plenty of space in between so they have plenty of room to rise. Cover with lightly oiled clingfilm for a second time and leave to rise in a warm room for a further 30 - 45 minutes.

  • 4. Preheat the oven to 220c (fan 200c / gas 7). Roll out the marzipan very thinly on a surface dusted with icing sugar. Cut using a sharp knife in to 16 equal strips, long enough to cover the rolls as these will be your crosses. Lightly place 2 strips onto each roll to form the cross. Bake in the oven for 10 minutes.

  • 5. To make the glaze, gently warm the sugar and milk until dissolved. Brush over the hot buns and bake for a further 5 minutes, or until golden brown.

  • 6. My preferred way of serving these is cut through the middle horizontally with a nice layer of butter but each to their own!!
  • Tips

    • ***TIP*** - Keep your eye on them once they go into the oven as they tend to brown very fast!

    • It doesn't burn but you have to watch it like a hawk!!! As long as they're golden brown consider them done. I have burnt the marzipan a few times myself but as long as they're not black burnt then browning the marzipan, just slightly, brings out the flavour even more. Thank you for your lovely comment.     I love this recipe - it's a great Easter standard with the addition of marzipan which compliments the hot cross bun perfectly and makes them the best you'll have ever tasted
