Double Decka Salmon Pie

Method

  • Make the pastry by rubbing the marg into the flour till fine breadcrumbs, add the lemon and water to mix into a a soft dough, set aside.

  • Pre heat the oven to Gas 7 / 220 deg

  • In a mortar bowl mix the peppercorns, nutmeg, zest of lemon and orange, grated ginger, and grind them all to a paste. Then add the sultanas.

  • Roll out your pastry to an oblong, place once piece of the washed salmon onto it, then paste over the mixture from your bowl, then add the second piece of salmon on the top, balancing them carefully. Now after brushing the edges of the pastry with some of the beaten egg, wrap the pastry around the salmon. With any left over pastry decorate the top, brush over the egg glaze and place on an oven tray.

  • Put the pie in a hot oven for 15 mins, then turn it down to Gas 4 / 180 deg for a further 20 mins.

  • This can be served hot or cold (once cooked) enjoy

    • 6 oz Self Raising Flour
    • 3 oz Margarine
    • ½ TSP Lemon Juice
    • 1 TBSP Water to mix
    • 1 oz Margarine
    • Zest of ½ A Lemon
    • Zest of ½ An Orange
    • 1 TSP Grated Ginger
    • ¼ TSP Black Pepper Corns
    • ¼ TSP Ground Nutmeg
    • 2 Pieces Salmon
    • 1 Beaten Egg to Glaze
    • 2 oz Sultanas
