Easy Spicy Vege Stir Fry

Method

  • Heat the chilli oil in a wok or frying pan, when hot add a squeeze of chilli puree and a squeeze of garlic puree. Add the chopped onion and fry for a couple of minutes. Add the peppers and quorn pieces and fry until the quorn is softened. Add the mushrooms. Once you think the veg and the quorn is cooked, add the rice and the peas. Stir until all the ingredients are mixed together. Once it is all heated through add soy sauce to taste and serve.
  • Tips

    • This recipe is a good way of using up left over cooked rice from the night before and also works well with noodles.

    Ingredients

    • 1tbsp Chilli oil
    • 1 squeeze Garlic paste
    • 1 sqeeze Chilli paste
    • ½ chopped onion
    • ½ red bell pepper
    • ½ yellow bell pepper
    • 1 handfull mushrooms sliced
    • small handful frozen peas (already cooked)
    • 8-10 pieces Quorn chicken style pieces
    • 1 cup Cooked brown rice
    • to taste soy sauce

    Keeping tubes of garlic and chilli puree in the fridge is really useful for quick suppers when you haven't got time to buy fresh ingredients. This dish works well with noodles too.
