Method

  • Put about one third of the butter in a microwavable bowl with the onion. Cook on full power for 5 mins. Stir in the flour and some seasoning. Add the stock cube, then whisk in the water and the milk, cook for 8 mins, whisking during this time.
  • Stir in the mixed veg., turkey, mushrooms and cook for 10 mins, stirring once during this time.

  • Whilst this is cooking melt the remaining butter and oil in a frying pan, cook the garlic in this and then add the breadcrumbs and cook for a few minutes until golden. Add the herbs.

  • Place a half of the turkey mixture in a deep dish, sprinkle with half the breadcrumbs, cover this with the rest of the turkey mixture and top with the remaining breadcrumbs.
  • Top this with sliced tomato and heat in the microwave until piping hot.
  • Garnish with parsley.

    • 1½ ozs Plain Flour
    • 1 Chicken Stock Cube
    • ½ pt Boiling Water
    • ½ pt Milk
    • 8 ozs Frozen Mixed Vegetables
    • 12 ozs Cooked Turkey (cubed)
    • 8 ozs Sliced Mushrooms
    • 2 tblspns Olive Oil
    • 1 Crushed Garlic Clove
    • 8 ozs Fresh Breadcrumbs
    • 4 tblspns Fresh Herbs. chopped
    •  Sliced tomato and Parsley for Garnish
