Method

  • 1. Gently cook chopped rhubarb in 1 tbs water and sugar to taste.

  • 2. Sift together flour, custard powder & baking powder. Add sugar & salt.

  • 3. Beat together milk, oil, eggs & vanilla. Blend together egg mix & flour mix till smooth. Fold in rhubarb.

  • 4. Spoon into muffin cases. Bake for 20-25 mins @ 200 C / Gas 6.

    • 150g Plain Flour
    • 50g Custard Powder
    • 150g Sugar
    • ½ tsp Salt
    • 1 tsp Baking powder
    • 100ml Sunflower Oil
    • 150ml Milk
    • 2 small Eggs
    • 150g Chopped Rhubarb (cooked & sweetened to taste)
    • ½ tsp Vanilla Extract
