Rhubarb and Custard Muffins
Method
1. Gently cook chopped rhubarb in 1 tbs water and sugar to taste.
2. Sift together flour, custard powder & baking powder. Add sugar & salt.
3. Beat together milk, oil, eggs & vanilla. Blend together egg mix & flour mix till smooth. Fold in rhubarb.
4. Spoon into muffin cases. Bake for 20-25 mins @ 200 C / Gas 6.
Ingredients
- 150g Plain Flour
- 50g Custard Powder
- 150g Sugar
- ½ tsp Salt
- 1 tsp Baking powder
- 100ml Sunflower Oil
- 150ml Milk
- 2 small Eggs
- 150g Chopped Rhubarb (cooked & sweetened to taste)
- ½ tsp Vanilla Extract
