Method

  • 1. Place the laksa paste into a saucepan and pour over the coconut milk and chicken stock.

  • 2. Add the chicken and simmer until the meat is cooked.

  • 3. Stir in tomatoes, sugar snap peas and noddles. Cook a little bit further.

  • 4. Sprinkle with coriander, than serve.
  • Ingredients

    • 800 ml coconut milk
    • 250 ml chicken stock
    • 0.5 cup laksa paste
    • 4 chicken breasts fillets, sliced
    • 250g cherry tomatoes. halved
    • 250g sugar snap peas
    • 200g noodles
    • 1 bunch coriander. roughly chopped
