Method
1. Place the laksa paste into a saucepan and pour over the coconut milk and chicken stock.
2. Add the chicken and simmer until the meat is cooked.
3. Stir in tomatoes, sugar snap peas and noddles. Cook a little bit further.
4. Sprinkle with coriander, than serve.
Ingredients
- 800 ml coconut milk
- 250 ml chicken stock
- 0.5 cup laksa paste
- 4 chicken breasts fillets, sliced
- 250g cherry tomatoes. halved
- 250g sugar snap peas
- 200g noodles
- 1 bunch coriander. roughly chopped
