1. To start it's best to put the joint of beef and onions in a roasting tin and pour cooking oil over the onions. If you put the onions in there too it gives the meat loads of flavour and makes your roast extra tasty!
2. Then you need skewer a hole in the meat and afterwards cover the roasting tin with some foil and place in a nice hot oven on 180C.
3. Give it about 20 minutes or so, maybe a bit longer depending how big you joint is and when the beef is cooked leave it to stand for around 20minutes. I usually find this help keep the flavour more as well as making carving a whole lot easier!
4. For the vegetables, heat the oil in a roasting tin and then add potatoes, parsnips onions, carrots, garlic and anything else you want to roast! I get the girls to join in and help clean prep and chop the veg, to make it into a real family affair.
5. Once prepped cook the veg in an oven on 200C for about 20 minutes.
6. Finally, for the gravy, use a couple of spoonfuls of gravy granules and either add water from vegetables that you may have boiled or plain boiled water. The more granules you use, the thicker the gravy will be! I like to use a good few spoonfuls to make it extra thick.
7. And there you have it, my absolute favourite family dish!
