Method

  • 1)Cook two portions of brown rice in boiling water
  • 2)Meanwhile prepare the other ingredients. Heat olive oil and 1-2 tablespoons of water in a wok. Add carrots, peppers, courgette and mushrooms over high heat until softened (7-10 mins), add more water if it starts to dry out.
  • 3)Turn down heat, add coconut and dried fruit. After a couple of minutes add soy sauce and 3 dashes of Tabasco sauce. Season with sesame seeds. Serve with the brown rice.

    •  olive oil to fry
    • 1 Carrots peeled and sliced
    • 1 yellow bell pepper chopped
    • 1 red bell pepper chopped
    • 1 1 small courgette sliced
    • 4 portabella mushrooms (large)
    • 1 cup shredded coconut
    • 1 oz dried fruit (apple. mango or papaya or mixture)
    • 1tbsp soy sauce
    • 3 dashes tabasco sauce
    • as desired Sesame Seeds
    • for two people brown rice

    The dried fruit and coconut in this recipe make this a bit more unusual than a normal stir fry
