Method

  • 1. Cream the margarine and sugar
  • 2.Fold in the flour, egg, vanilla essence and the chocolate chips.
  • 3. Split the 1/2 vanilla pod in half again and run a sharp knife along the inside of both 1/4's and but the seeds into the mixture and fold well.
  • 4.Put small dollops onto a greased baking tray and oput in a moderate oven for 15-20 minutes at 180 degrees celcius.
  • Tips

    • If u use granulated or white sugar it makes them crunchy but i prefer cookies soft so i use brown sugar.
      one cooked you can half dip then in melted chocolate or even ice them mmmm

    • Interesting that you use duck eggs. What difference does that made, do you reckon?

      If I used hen eggs, how many would I need instead of 1 duck egg?

    Ingredients

    • 75g about 3oz margarine
    • 75g about 3oz dark brown sugar
    • 150g about 6oz self raising flour
    • (optional but makes them taste way better) ½ a vanilla pod
    •  ½ teaspoon vanilla essence
    • 100g about 4oz chocolate chips
    • (hens egg will do but i like duck eggs) 1 free range duck egg
