Pineapple Meringue Flan

The Basics

Ingredients

  • ------------------- Pastry
  • 6oz Caster sugar
  • 3 Egg Whites
  • -------------------- Meringue Topping
  • Juice of a lemon
  • 2oz Caster Sugar
  • 3 Egg Yolks
  • 15oz Can pineapple
  • 3oz Sugar
  • 2 level tbs Cornflour
  • ------------------- Filling
  • 2 heaped tbs Dessicated coconut
  • 1 Egg Yolk with 2tsp water
  • 1½ozs Icing Sugar
  • 2½ozs Margarine
  • Pinch Salt
  • 4ozs Plain Flour
  • 2 Level tsp Cornflour

Method

Pastry

Mix all the ingredients together to a dough. Chill for 30 mins. Roll out to fit an 8" flan ring. Prick all over and bake 350F for 20 mins.

Filling

Mix together cornflour and stir in liquidised pineapple. Cook until mixture is thick and clear (about 5 mins). Beat yolk with rest of sugar until creamy. Stir into cooked mixture and cook gently for further 5 mins. Stir in lemon juice. When cool pour into flan case.

The Meringue Topping

Beat egg whites until stiff. Sift sugar with 2 level tsps cornflour. Add to meringue mixture a tbs at a time beating well each time. Put over cooled filling covering edges.

Bake for 30mins at 300F.
