Carrot & Ginger Soup

Method

  • - fry the onion in the butter in a deep pan until golden
  • - add the chopped carrots, potato and ginger and fry for 10 mins with the lid on the pan (you may need to add a little more butter here if desired)
  • - add the water & bring to the boil
  • - let the veg then simmer until cooked
  • - blend the ingredients in your food processor / blender until smooth
  • - return to the pan & add the sea salt and black pepper
  • - at this point you can allow to cool & split between freezer tubs and chill or freeze OR add more water if required and serve immediately
  • Tips

    • This soup is great as it is so thick, I split the mixture into tubs and freeze or chill it and then when I reheat it I just add more water.

      I also add quite a bit more black pepper when I serve it to make it a really warming soup!

    • I have just tried this and it was really easy and tastes delicious. I added fresh ginger instead of ginger powder too, mmmmmm yummy, can't wait to eat it for dinner!

    • 1 medium onion finely diced
    • 1 medium Potato
    • ½ tsp ginger powder
    • 1 tsp sea salt and freshly ground black pepper
    • 1 tbsp Butter
    • 900ml Water
