1. Wash and slice all the vegetables except the tomatoes and garlic.
2. Leave the tomatoes whole and the garlic cloves in their skins.
3. Toss all the vegetables together in a large roasting tin with plenty of olive oil and the thyme.
4. Season with ground black pepper and a little salt.
5. Roast at 180C for 30-40 minutes.
6. Meanwhile, rinse the quinoa thoroughly and put it in a saucepan with the water. Bring to the boil, then cover and turn down to simmer until it is cooked. This should take about 15 minutes.

Please tell me exactly what quinoa is. Is it from the wheat family?
