Quinoa With Roast Vegetables

Method

  • 1. Wash and slice all the vegetables except the tomatoes and garlic.

  • 2. Leave the tomatoes whole and the garlic cloves in their skins.

  • 3. Toss all the vegetables together in a large roasting tin with plenty of olive oil and the thyme.

  • 4. Season with ground black pepper and a little salt.

  • 5. Roast at 180C for 30-40 minutes.

  • 6. Meanwhile, rinse the quinoa thoroughly and put it in a saucepan with the water. Bring to the boil, then cover and turn down to simmer until it is cooked. This should take about 15 minutes.

  • 7. Serve (top quinoa with vegetables)

    • 2 zucchinis
    • 2 large mushrooms
    • 10 cherry tomatoes
    • 8 cloves garlic
    •  olive oil
    •  fresh thyme
    •  ground black pepper
    • 1 cup quinoa
    • 2 cups water
