Tips
- Flatten the meatballs a bit when you form them. It stops the rolling around when you turn them over for grilling.
Don't worry if you're out of chestnuts - they're not essential, just add a bit more interest.
Avoid using sausage meat if you can. It's a bit too fatty.
The meatballs go really well with a peppery creamy sauce made by Sch... (you know who!)which you can buy ready made to save time. Needs thinning down a bit though.
Ribbon noodles are a good accompaniment to this dish as is cranberry sauce.
