Method

  • 1. Smash up chestnuts on chopping board (or use a blender).
  • 2. Chop onion really finely and garlic even more so.
  • 3. Combine all ingredients in a bowl and knead thoroughly by hand. You may need to add a little water or milk to help the process. You could also use liquid stock instead of a cube to help this process.
  • 4. Rest the mix for 15 minutes then form into 16 to 20 balls.
  • 5. Place on a baking tray and grill on alternate sides until just starting to brown.
  • 6. Add to sauce of your choice and simmer for 20+ minutes.
  • Tips

    • Flatten the meatballs a bit when you form them. It stops the rolling around when you turn them over for grilling.

Don't worry if you're out of chestnuts - they're not essential, just add a bit more interest.

Avoid using sausage meat if you can. It's a bit too fatty.

The meatballs go really well with a peppery creamy sauce made by Sch... (you know who!)which you can buy ready made to save time. Needs thinning down a bit though.

Ribbon noodles are a good accompaniment to this dish as is cranberry sauce.
