Bacon and Lentil Soup

Method

  • 1. Trim excess fat from the bacon. Chop bacon and onion finely and saute together until softened.
  • 2. Combine with rest of ingredients and bring to boil.
  • 3. Reduce heat and simmer for 30 to 45 minutes (until lentis soft).
  • 4. Add a second stock cube if needed (but be careful - some bacon can be very salty).
  • 5. Remove bay leaves and blend if you like your soups smooth.
  • Tips

    • Goes well with croutons - lemon croutons are even better.
      Garnish with parsley if you're of an artistic bent.

    • 1 medium to large onion
    • 1 ham stock cube
    • 0.5 tsp curry powder
    • good pinch mixed herbs
    • 2 small bay leaves
    • 1.75 litres water
