Method

  • 1. Preheat the oven to 180 C.

  • 2. Cream butter and sugar to make a smooth mixture, add the egg and golden syrup, then the dry ingredients.

  • 3. Roll out the dough to about 1-2 cm high. Cut out circles with a cookie cutter.

  • 4. Put the circles on a greased tray and put into the oven. Cook for 15-20 mins.

  • 5. Let them cool on a wire rack before sandwiching them together with jam in between.

  • 6. Make white icing and spread circles of the icing on the top of the biscuits and sprinkle with pink jelly crystals.
  • Tips

    • * Spread the jam right out to the edges of the biscuit.

      * If you don't have jelly crystals then you can just sprinkle sprinkles (like hundreds and thousands) on top instead.

    • 1 tsp Baking soda
    • 1 tbls Cinnamon
    • 2 cups Plain flour (sifted)
    • 1 tsp Mixed spice
    • 1 tbls Golden syrup
