Method

  • The ingredients above are illustrative: you can use any root veg of your choice. This combination just happens to be the last one I used. Quantities are equally flexible - I use equal amounts of each veg.

  • 1. Peel and thinly slice the veg. Steam until half cooked. Some veg, like swede, will need starting off before the others because they take longer to cook.
  • 2. Layer veg in an ovenproof dish lightly dotting with butter and seasoning with stock powder as you go. A few drops of lemon juice can also be added.
  • 3. Cover and bake in a medium oven for 20+ mins.
  • 4. Top with a 50-50 mix of grated cheese and breadcrumbs and continue baking until brown on top
  • Tips

    • You can reduce the cooking times if you like your veg crunchier.

      People seem to eat a lot more veg in this form than they mormally would which can't be a bad thing.
