    Ingredients

    • ½ kilo pumpkin
    • 2 medium size potato
    • 1 green pepper
    • 1 leek
    • 1 medium onion
    • 2 cloves garlic
    • 2 carrots
    • 400grs tin tomatoes
    • 1 knob butter or margarine
    •  salt & pepper
    •  oil for frying

    Method

    • -Peel, dice and wash all the vegetables.
      -Heat oil in medium saucepan and gently fry all the vegetables except the potaotes and the pumpkin for about 10 mins, stiring occasionally.
      -Add the tomatoes and mix.
      -Add the pumpkin and potatoes and cover with water.
      -Bring to the boil and simmer for about 20 mins. or until the potatoes are soft.
      -Add a knob (about 1 tablespoon) of butter or margarine and purée.
      -Season to taste.
      -Serve hot with crusty bread.

     

    Tips

    • This soup is quite thick, if you like it abit thinner just add more water when you add the pumpkin and potatoes.
