7 Veg and Pumpkin Soup
Ingredients
- ½ kilo pumpkin
- 2 medium size potato
- 1 green pepper
- 1 leek
- 1 medium onion
- 2 cloves garlic
- 2 carrots
- 400grs tin tomatoes
- 1 knob butter or margarine
- salt & pepper
- oil for frying
Method
- -Peel, dice and wash all the vegetables.
-Heat oil in medium saucepan and gently fry all the vegetables except the potaotes and the pumpkin for about 10 mins, stiring occasionally.
-Add the tomatoes and mix.
-Add the pumpkin and potatoes and cover with water.
-Bring to the boil and simmer for about 20 mins. or until the potatoes are soft.
-Add a knob (about 1 tablespoon) of butter or margarine and purée.
-Season to taste.
-Serve hot with crusty bread.
Tips
- This soup is quite thick, if you like it abit thinner just add more water when you add the pumpkin and potatoes.
