Method

  • 1. Preheat oven to 200oC.


  • 2. Place large roasting tin in oven and heat for 15 minutes.


  • 3. Remove pan from oven, add 2 tbsp of olive oil followed by the vegetables, garlic and herbs.


  • 4. Drizzle the remaining oil and lemon juice over the vegetables, stir to coat and season well.


  • 5. Cover pan with foil and roast for 45 minutes.


  • 6. Uncover and roast for a further 30 minutes.

  • Ingredients

    • 4 tbsp olive oil
    • 454g Onions. chopped
    • 454g Carrots Peeled and Chopped
    • 454g Sweet potatoes. diced
    • 454g Potatoes. cubed
    • 6 Cloves of Garlic Peeled
    • 2 tbsp Fresh sage
    • 2 tbsp Fresh rosemary
    • 2 tbsp Fresh oregano
    • 1 Lemon (Juice)
