Method
1. Preheat oven to 200oC.
2. Place large roasting tin in oven and heat for 15 minutes.
3. Remove pan from oven, add 2 tbsp of olive oil followed by the vegetables, garlic and herbs.
4. Drizzle the remaining oil and lemon juice over the vegetables, stir to coat and season well.
5. Cover pan with foil and roast for 45 minutes.
6. Uncover and roast for a further 30 minutes.

- 454g Sweet potatoes. diced
- 454g Potatoes. cubed
- 6 Cloves of Garlic Peeled
- 2 tbsp Fresh sage
- 2 tbsp Fresh rosemary
- 2 tbsp Fresh oregano
- 1 Lemon (Juice)
