Bakewell Pudding
Ingredients
- 6-8oz Puff Pastry
- 4-6 oz Strawberry Jam
- 4 oz Castor Sugar
- 6 Egg Yolks
- 3oz Unsalted Butter
- 4 oz Ground Almonds
- sprinkle of Almond Essence
Method
- Roll out the patry, line a shallow dish with the pastry and prick the base with a fork.
Cover the base with the Jam, then add the sugar, egg yolks, ground almonds and almond essence in a bowl and beat by hand.
Melt the butter ina small pan on a very low heat and add this to the mixture and mix well until the whole mixture looks like a batter mix.
Pour the whole filling over the Jam and spread evenly.
Put in oven and bake at 300F, 175C or gas mark 5 for 30 minutes or until the mixture turns golden brown.
