Bakewell Pudding

Method

  • Roll out the patry, line a shallow dish with the pastry and prick the base with a fork.

  • Cover the base with the Jam, then add the sugar, egg yolks, ground almonds and almond essence in a bowl and beat by hand.

  • Melt the butter ina small pan on a very low heat and add this to the mixture and mix well until the whole mixture looks like a batter mix.

  • Pour the whole filling over the Jam and spread evenly.
  • Put in oven and bake at 300F, 175C or gas mark 5 for 30 minutes or until the mixture turns golden brown.

    • 6-8oz Puff Pastry
    • 4-6 oz  Strawberry Jam
    • 4 oz Castor Sugar
    • 6 Egg Yolks
    • 3oz Unsalted Butter
    • 4 oz Ground Almonds
    • sprinkle of Almond Essence
