Tangy Orange Biscuits

Method

  • 1. Preheat the oven to 180°C (350°F/Gas 4). sieve the flour into a bowl and add the butter. Rub the butter into the flour until they resemble breadcrumbs.
  • 2. Stir the sugar, orange peel, egg yolk and honey into the flour.
  • 3. Knead the mixture into a dough.
  • 4. Roll it into a 5cm (2") in diameter sausage.
  • 5. Cut into 1/2cm thick slices with a sharp knife. If it is too soft, cool in the fridge for about 1 1/2 hours, wrapped in cling film or greaseproof paper.
  • 6. Line the baking tray with baking paper, and place the biscuits on top.
  • 7. Bake for about 8-10 minutes(Fan oven 150°C). They should be a little bit soft but not browned.
  • 8. Remove the biscuits from the oven, allow them to set, and put them on a rack to cool.

  • Icing:
  • Melt the chocolate. Mix the sugar and orange juice in a separate cup. drizzle the icings over the biscuits as long as they are still warm. Use a fork or piping bag for the best effect.
  • Tips

    • Keep turning the dough sausage and reshape while cutting for evenly round biscuits!

    • 125g (4oz) Self Raising Flour
    • 60g (2oz) Unsalted Butter (diced)
    • 60g (2oz) Soft Light Brown Sugar
    • 1 Teaspoon Orange Peel (finely chopped)
    •  ½ Egg Yolk
    • 1 Tablespoon Clear. Runny Honey
    • ICING
    • 25g (1oz) Dark Chocolate
    • 25g (1oz) Icing Sugar
    • 1 Teaspoon Orange juice

    Very yummy biscuits - can be served on their own or with cream and raspberries!
    This recipe is simple, but you need to be able to knead well!
