1. Preheat the oven to 180°C (350°F/Gas 4). sieve the flour into a bowl and add the butter. Rub the butter into the flour until they resemble breadcrumbs.
2. Stir the sugar, orange peel, egg yolk and honey into the flour.
3. Knead the mixture into a dough.
4. Roll it into a 5cm (2") in diameter sausage.
5. Cut into 1/2cm thick slices with a sharp knife. If it is too soft, cool in the fridge for about 1 1/2 hours, wrapped in cling film or greaseproof paper.
6. Line the baking tray with baking paper, and place the biscuits on top.
7. Bake for about 8-10 minutes(Fan oven 150°C). They should be a little bit soft but not browned.
8. Remove the biscuits from the oven, allow them to set, and put them on a rack to cool.
Icing:
Melt the chocolate. Mix the sugar and orange juice in a separate cup. drizzle the icings over the biscuits as long as they are still warm. Use a fork or piping bag for the best effect.
Tips
Keep turning the dough sausage and reshape while cutting for evenly round biscuits!
