Method
Preheat the oven to 220c
Put the sugar, eggs and oil into a large bowl and beat and whisk for 3 minutes, until the mixture has lightened in colour and is bubbly.
Sieve the flour and baking powder into the bowl and fold in gently with a wooden spoon.
Mixed in the grated carrots and sultanas.
Put a large dollop of mixture into each fairy cake case.
Bake for about 15 mins unti firm to the touch and golden brown.

- 200g/8oz Soft Brown Sugar
- 200g/8oz Plain Flour
- 3 Medium Eggs
- 3 Medium Carrots
- 1 Cup Sultanas
- 4tbsp Sunflower Oil
- 2 level tsps Baking Powder
