Peach and Orange French Toast

Method

  • 1. Cut the crusts from the bread. Cut the slices diagonally.

  • 2. Lightly beat the eggs, orange rind and juice in a shallow dish.

  • 3. Melt the butter in a pan.

  • 4. Dip the bread into the mixture and cook soaked bread over medium heat until Golden. Drain on absorbant paper.

  • 5. Add drained peaches to the pan and cook for two minutes until heated through.

  • 6. Arrange french toast allowing one slice per serving.

  • 7. Dust with sifted icing sugar and serve with whipped cream, youghurt or ice cream if desired.
  • Tips

    • This recipe can be addapted easily by adding any preserved fruit you may have in the pantry. Replace the orange rind and orange juice with 5 ml of vanilla essence and a generous pinch of cinnamon and then use canned cherries or strawberries. Remember to drain the fruit well before heating gently before putting onto the french toast.The recipe is easily doubled for a larger crowd and is very economical as a after dinner treat.
