Method

  • Blend the margarine with the peanut butter and then stir in both the sugars

  • Stir in the flour to make a dough.

  • Shape the mixture into 18 balls. Space them out onto baking trays and flatten them slightly.

  • Bake each tray for about 15 minutes at 200ºC/400ºF until pale brown.

  • Leave to cool slightly before very carefully transferring them to a cooling rack.

  • Tips

    • Adjust the baking time (±2 mins) depending on whether you like them slightly soft and chewy, or crisp and crumbly.

      Try using soft brown sugar instead of demerara.
