Method

  • 1 Wash & debeard mussels ,discarding any that do not close
  • when tapped.
  • 2 Put oil into a large pan & heat over a medium light , add
  • sliced garlic & saute for 2-3 mins with out colouring.
  • 3 Add mussels,ouzo,& parsley to pan , cover with lid &
  • simmer for 5-10 mins until mussels have opened.
  • 4 Check seasoning & adjust as required ,then serve
  • Ingredients

    • 1 kg fresh mussels
    • 3 cloves garlic thinly sliced
    • 2 tbspn fresh flat leaf parsley. chopped
    • 150 ml ouzo
    • 2 tbspn olive oil to saute
    •  salt and freshly ground black pepper
