Method

  • 1. put margarine,golden syrup,and caster sugar in a warm pan.

  • 2. Sieve all dry ingredients into a bowl and stir in the warm syrup mixture.

  • 3. Bring water and lemon juice to a boil and stir in cake mixture.

  • 4. Pour cake mixture into a grease lined 2lb. loaf tin.

  • 5.Bake for 45 mins. Oven Temp 180 C.

  • Cool in the tin.
  • Tips

    • This mixture will also divide into 9 muffin cases but requires shorter time baking, 20-25 minutes and top with lemon icing.

    • 3 oz margarine
    • 3 tablespoons golden syrup
    • 3 oz caster sugar
    • 6 ozs self raising flour
    • 1 level teaspoon bicarbonate of soda
    • 1 ½ teaspoons ginger (ground)
    • 1 teaspoon mixed spice
    • 1 egg
    • 4 ozs Water
    • 1 tablespoon lemon juice (bottled)
