Method

  • 1. Put the cous cous in a bowl, then add the boiling water. Stir with a forkuntil the cous cous has soaked up all the water.

  • 2. Add the lemon juice and olive oil. Fluff up with the fork.

  • 3. Chop the peppers, tomatoes and cucumber into small pieces, slice the spring onion finely, then add to the cous cous with the herbs.

  • 4. Season to taste with salt and pepper.
  • Tips

    • Cover in cling film and put in fridge for a while before serving. If necessary, add more seasoning

    • 150g (5.3oz) Instant Cous Cous
    • 250ml Boiling Water
    • 1 Tablespoon Lemon Juice or Balsamic Vinegar
    • 3 Tablespoons Olive Oil
    • 2 Tomatoes
    •  or
    • 6 Cherry Tomatoes
    • ¼ Cucumber
    • ¼ Red Pepper
    • ¼ Yellow Pepper
    • 1 Spring Onion
    • 1 Handful Chopped Herbs (Mint. Basil. Coriander. Parsley. etc.)
    •  Salt and Pepper

    I made this when a friend of my parents came to eat. My salad was gone in a flash!
