Method

  • 1. Wash the rice 4 or 5 times then cover with approx 1 and ½ times cold water, add salt, cardamom and cinnamon stick.
  • 2. Place on fairly high heat and allow to boil with lid on.
  • 3. Boil the kettle so as when rice is ready it can be further washed to prevent stodgyness.
  • 4. When cooked and water is all gone from the pan (make sure and stir rapidly to prevent sticking to pan when water is nearly all evaporated)…tip into colander/sieve and swirl out remaining in pan with boiled water, pour boiling water over the cooked rice.
  • 5. Drain and return to the pan. Fork through if desired a teaspoon or two of olive oil.
  • Tips

    • Eating plenty does not induce a heavy stomach and is low GI apparently!!!

    Ingredients

    • 1 cup Basmati rice
    • 6 Cardomom pods
    • 1 Cinnamon stick
    • to taste Salt and pepper
