Peppered Mackerel Risotto

  • I have no idea how I first came to cook this recipe.... probably due to having only rice, peppers, and peppered mackerel in the cupboard - but it is very tasty!

    Ingredients

    • PEPPERED MACKEREL RISOTTO
    • 1 packet rice
    • 3 mixed peppers
    • 1 red onion
    • 2 small Peppered mackerel
    • 1 litre Vegetable or Fish stock
    • to taste Garlic
    •  Olive oil or butter

    Method

    • Chop the onion, garlic and mixed peppers and fry until soft in the olive oil/butter. Add the rice and stir until it starts to turn translucent. Add stock to cover the rice and keep stirring and topping up the stock until it has been absorbed and is soft with a slight bite. Chop or break up the peppered mackerel and add to pot, stir in, serve and enjoy.

     

    Tips

    • Make sure you serve with a luscious and full-bodied red wine!
