Method

  • 1. Heat salted water in large pan and add the potatoes.Cover and boil for about 10-15 minutes until soft and ready to mash.

  • 2. Whilst the potatoes are boiling heat half the butter in a frying pan on a low heat. When butter melted, add the spring onions (scallions)and spring greens/cabbage and fry for approx 5 minutes until softened. Add the garlic and fry for few minutes more. Remove from heat and set aside.

  • 3. By now the potatoes should be cooked. After draining, add salt & pepper, cream and the other half the butter and mash until smooth and creamy.

  • 4. Mix in the cabbage mix and stir well through the potatoes to ensure they are evenly distributed.

  • 5. Serve.

    • 800g floury potatoes peeled and halved
    • 4 or 5 spring onions (scallions). chopped
    • 200g Spring greens/green cabbage/kale or mixture of all
    • 25g Butter
    • 2 tbsp cream
    • pinch salt and freshly ground black pepper
    • 1 Clove of Garlic Crushed
