Method

  • In a bowl, mix together fat, prawns, salt, cornflour (cornstarch) and egg white. Season with white pepper.
  • Spread on to one side of each slide of bread. Coat with a thick layer of sesame seeds, and press well into the spread. Cut each slice into 4 triangles.
  • In a wok, heat oil until smoking, reduce heat slightly, then carefully lower in the fingers, coated side down. Deep-fry for 2-3 minutes until golden brown. Drain on absorbent kitchen paper. Serve hot.

    • 30g (1oz) Pork fat, finely minced
    • 185g (6oz) Peeled king prawns, finely minced
    • ¼ Teaspoon Sea salt
    • 1 TBSP Cornflour (cornstarch)
    • 1 Egg white, lightly beaten
    •  White pepper
    • 3 Thin slices white bread, crust removed
    • 125g (4oz) Sesame seeds
    • 625ml (20fl oz/ 2½cups) Vegetable oil
