In a bowl, mix together fat, prawns, salt, cornflour (cornstarch) and egg white. Season with white pepper.
Spread on to one side of each slide of bread. Coat with a thick layer of sesame seeds, and press well into the spread. Cut each slice into 4 triangles.
In a wok, heat oil until smoking, reduce heat slightly, then carefully lower in the fingers, coated side down. Deep-fry for 2-3 minutes until golden brown. Drain on absorbent kitchen paper. Serve hot.
