Method

  • 1. Set the oven to 350f/180c , Gas mark 4. Also, grease a 7 1/2 inch cake tin.
  • 2. Heat the butter and golden syrup until melted, then mix together all the ingredients but the bicarb and the milk.
  • 3. Dissolve the bicarb in the milk then add it to the other mixture. Turn the mixture into the tin.
  • 4. Roll out the almond strips and cut into slices 1/2 an inch in width. Arrange the strips Lattice style and press half a cherry into each of the gaps.
  • 5. Bake in the center of the oven for 1 hour, 45mins or until cooked. If the top starts to overbrown, place some grease-roof paper on top.
  • 6. Leave to cool in the tin.

    Ingredients

    • 6 oz Marzipan
    • 2 tspns golden syrup
    • 12 oz plain flour
    • 2 tspns mixed spice
    • ½ tspn salt
    • sugar demerara sugar
    • ½ lb grated carrots
    • ½ lb Grated Cooking Apple
    • 2 large eggs
    • 1 tspn Bicarb of soda
    • 2 tablespoons milk
    • 4oz Almond paste (or marzipan)
    • 5-6 glace cherries. halved
