Brown the chicken breasts in the olive oil. Peel and slice the onions and place in the bottom of the slow cooker or casserole dish. Put the chicken breasts on top of the onions and cook on lowest heat (according to slow cooker instructions) for approximately 4 hours. Remove chicken and set aside. Blend the onions with the juices until liquid and add ketchup and stir. Put sauce back in slow cooker (or casserole dish) with chicken breasts and cook on low for a further hour or until meat is really succulant and falling apart. Serve with rice or mashed potato.
Tips
This receipe can be made in a casserole dish and cooked in the oven on a very low heat for the same number of hours.
I love this recipe because it was given to me by my mum who lives in Florida. She makes it with Beef Brisket which is delicious but my kids don't like red meat so I adapted it.
