Method

  • 1. wash the rice 3 times until the water runs clear.

  • 2. Soak the rice for at least 20 minutes in salt water. Then wash the rice again.

  • 3. Boil the water in a pot and then add the rice.

  • 4. When the water starts boiling (with the rice in the water) leave for about 4 minutes. To check when it is ready look at the rice - they start to separate and when you taste it - it is not too hard or too soft .

  • 5. Strain the rice and wash through with 1 glass of boiling water - leave for approx 3 minutes to drain.

  • 6. Wash the pot and then put in 1 large potatoe sliced as a layer on the base of the pot. Add some oil and a little bit of salt.

  • 7. Put the rice on top of the potatoe and make sure it doesn't stick to the side (gather the rice like a mountain) - put the lid back on.

  • 8. Put on a low even heat for 40 minutes

  • 9. In the meantime melt the Zaffron (1/2 tsp) in little (3 tbsp)hot water - leave it for 5 minutes. When the rice is ready take 5 tbsp of rice and mix with the zaffron. Use thei rice to decorate the rest of the rice in a bowl.
  • Tips

    • 1. 1/2 cup per person
      2. When you taste the salt water it must taste salty - but don't worry we wash it out.
      3. Put a clean cloth on top of the rice and then put the lid on in stage 7,
      4. Some people try to take out the rice and potato and put it into a big dish and then put the rice mixed with the zaffron as decoration on top
