Lean Beef Burger and Mashed Potatoes

Method

  • 1. Place the beef mince, onion and tomato paste in a bowl.
  • 2. Season according to taste and mix until well combined.
  • 3. Divide the mixture into 4 portions and shape into large patties about 1cm thick.
  • 4. Heat a large non-stick frying pan or barbecue plate and spray lightly with oil. Cook patties over medium-high heat for 3 minutes each side. Set aside.
  • 5. Assemble burgers with cucumber, rocket leaves, beef patty,cheese,red onion and hamburger bun.

  • 1. For mashed potato, boil potatoes until soft, drain and return potatoes to pan.
  • 2. Meanwhile, combine the milk and cream in microwave-safe jug. Microwave on high for 1 minute or until hot.
  • 3.Mash potatoes potato masher in saucepan or medium bowl. Add the butter and hot milk mixture; whisk until smooth. Season to taste with salt and pepper. Cover to keep warm.

    • 500g lean beef mince
    • ½ onion. finely chopped
    • 2 tbsp. tomato paste
    • 50g wild rocket. washed
    • 1 small red onion. finely sliced
    • 4 cheese. sliced
    • ½ long cucumber. sliced
    • MASH POTATOES
    • 1 kg Desiree potatoes. peeled. chopped
    • 150 ml milk
    • 80 ml cream
    • 50g butter
    • to taste salt and pepper
