1. Place the beef mince, onion and tomato paste in a bowl.
2. Season according to taste and mix until well combined.
3. Divide the mixture into 4 portions and shape into large patties about 1cm thick.
4. Heat a large non-stick frying pan or barbecue plate and spray lightly with oil. Cook patties over medium-high heat for 3 minutes each side. Set aside.
5. Assemble burgers with cucumber, rocket leaves, beef patty,cheese,red onion and hamburger bun.
1. For mashed potato, boil potatoes until soft, drain and return potatoes to pan.
2. Meanwhile, combine the milk and cream in microwave-safe jug. Microwave on high for 1 minute or until hot.
3.Mash potatoes potato masher in saucepan or medium bowl. Add the butter and hot milk mixture; whisk until smooth. Season to taste with salt and pepper. Cover to keep warm.
