" A quick and tasty supper dish. Takes 30 minutes to prepare but tastes like you have made a big effort! "
1. Cube the pork and set aside.
2. Mix together, in a shallow dish, cumin seeds, ground coriander, chopped garlic cloves, mexican chilli powder, turmeric, lemon juice and a generous glug of ground nut oil - Mix well.
3. Add pork and cover the meat with the marinade.
4. Add chopped onion, chopped red pepper, chooped chestnut mushrooms and chopped tomatoes. Season well and mix thoroughly.
5. Put the dish under the grill on the highest setting and cook for 20-25 minutes, stirring regularly to brown the meat.
6. Serve with basmati rice.
